Unexpected duplicate of fi-7160 scanner appearing

Windows 10 Pro
I am intermittently having a problem where the user can't scan. Upon investigation I always find find the same problem: An additional instance of this scanner has appeared and become the default (see attached). This new default never works, and the fix is to delete the duplicate from Settings > Devices > Printers & Scanners. The fix is easy but annoying, so I'd like to stop this from occuring. Any ideas?
